It turned out really dense and cake-like, not what I was expecting. But.. I also made the butter spread that went with it and found an amazing recipe that I will be keeping! &lt;div&gt;Browned Butter Spread from Smitten Kitchen&lt;/div&gt;&lt;div&gt;1-2 TB honey&lt;/div&gt;&lt;div&gt;few pinches sea salt&lt;/div&gt;&lt;div&gt;Melt 1/2 of butter over medium heat. Once melted reduce to medium low heat and brown. Cool to room temp. Whip the other half of butter till fluffy. Drizzle in browned butter, honey &amp;amp; salt. I love it because it doesn't taste fishy. And it's incredibly easy to make! Here is a recent recipe I made for dinner and everyone loved it! It was quick to put together and had great flavor.  I'm not sure where I got this recipe, but it's a keeper!&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Fish:&lt;/div&gt;&lt;div&gt;1/2 c. pecans (grind in food processor)&lt;/div&gt;&lt;div&gt;4 pieces of tilapia&lt;/div&gt;&lt;div&gt;1 tsp salt&lt;/div&gt;&lt;div&gt;1/2 tsp garlic powder&lt;/div&gt;&lt;div&gt;1/4 tsp pepper&lt;/div&gt;&lt;div&gt;3 TB butter&lt;/div&gt;&lt;div&gt;Sprinkle fish w/ salt, pepper and garlic powder on both sides. Dredge in nuts. Melt butter in a large skillet on medium heat. Add fish. Cook 3/4 min each side. &lt;/div&gt;&lt;div&gt;Sauce:&lt;/div&gt;&lt;div&gt;3 TB butter&lt;/div&gt;&lt;div&gt;1 shallot minced (i used abt 1/4 c. diced onion)&lt;/div&gt;&lt;div&gt;1 TB garlic&lt;/div&gt;&lt;div&gt;2 TB rum&lt;/div&gt;&lt;div&gt;2 TB lemon juice&lt;/div&gt;&lt;div&gt;2 TB orange juice&lt;/div&gt;&lt;div&gt;1 tsp honey&lt;/div&gt;&lt;div&gt;1/2 tsp salt&lt;/div&gt;&lt;div&gt;melt 1 TB butter in skillet on medium heat. Add shallot and garlic. Cook 5 min on low. Whisk in rum, juices, honey and salt. Add remaining 2 TB butter. Cook 1 min. I love scones, but often when I get one at a bakery or coffee shop they end up being dry and crumbly. I've been lucky enough to find a few great recipes for scones though. I will share two with you today that are both from The Pastry Queen. It's a cookbook from a bakery in Texas! I love this cookbook and have had great success with the recipes in it.&lt;br /&gt;Sweet Potato Scones (i only  made a half recipe and it was more than enough for 4 people)&lt;br /&gt;3 sweet potatoes&lt;br /&gt;4 c. flour&lt;br /&gt;2/3 c. sugar&lt;br /&gt;1 1/2 TB baking powder&lt;br /&gt;1/4 tsp kosher salt&lt;br /&gt;1 tsp cinnamon&lt;br /&gt;1/2 tsp nutmeg&lt;br /&gt;1 c. cold butter&lt;br /&gt;1/2 c. whipping cream&lt;br /&gt;1/2 c. buttermilk&lt;br /&gt;preheat oven to 400. grease baking sheet. prick potatoes with fork. bake 30-40 min. remove cool 10 min and cut in half lengthwise. scoop out flesh and mash with fork. cover and chill 20 min.&lt;br /&gt;(or you could cook them in the microwave and peel skin off) increase heat to 425. mix flour, sugar, baking powder, salt, cinnamon and nutmeg. Cut in butter until pea size. Add mashed potatoes. Add 1/4 c. cream, lightly stir. add remaining 1/4 c. cream + buttermilk. Form dough into a 3/4" rectangle on floured surface. Cut into squares, then diagonal to make triangles. bake 15-20 min.&lt;br /&gt; 1/4 c. maple syrup, 2c. powdered sugar, 1/4 c. heavy cream/half-n-half, pinch koser salt mix all and serve over warm scones&lt;br /&gt;&lt;br /&gt;Cranberry Walnut Scones (i also made a half recipe of this)&lt;br /&gt;1/2 c. walnuts&lt;br /&gt;4 c. flour&lt;br /&gt;2/3 c. sugar&lt;br /&gt;2 TB baking powder&lt;br /&gt;1 tsp kosher salt&lt;br /&gt;3/4 c. cold butter&lt;br /&gt;2 1/2 c. heavy cream (i used some half-n-half)&lt;br /&gt;2 c. fresh/dried berries&lt;br /&gt;1/2 c. sugar in the raw (i used regular sugar)&lt;br /&gt;preheat to 350. arrange nuts on baking sheet, toast 7-9 min. (i did mine in a skillet on the stove top) mix flour, sugar, baking powder, salt. cut in butter. add 1/2 of cream. stir lightly. add remaining cream. place dough on floured surface. One of my favorite things to eat is a Salted Caramel Brownie from Amelie's. So amazing. One day I will figure out how to make it, but until then I'll share with you two of my other favorite caramel recipes. &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Microwave Caramel Corn&lt;/div&gt;&lt;div&gt;1 c. brown sugar&lt;/div&gt;&lt;div&gt;1 stick butter&lt;/div&gt;&lt;div&gt;1/4 c. corn syrup&lt;/div&gt;&lt;div&gt;1 t. vanilla&lt;/div&gt;&lt;div&gt;1/2 t. salt&lt;/div&gt;&lt;div&gt;1/2 t. baking soda&lt;/div&gt;&lt;div&gt;4 qts. popped corn&lt;/div&gt;&lt;div&gt;Combine all except vanilla and popcorn. Microwave 2 minutes, then stir. Microwave until it comes to a full rolling boil then add vanilla. Pour over popcorn in a large brown paper bag. Shake. Microwave 1 minute 3xs. shaking after each minute. then voila! you've got some seriously addictive popcorn that everyone will love! &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Caramel Coconut Pie&lt;/div&gt;&lt;div&gt;Toast 7 oz. coconut flakes in 1/4 c. butter. add 1/2 c. pecans. set aside.&lt;/div&gt;&lt;div&gt;mix 8 oz cream cheese (softened) with 1 can sweetened condensed milk (eat a spoonful yourself and you will be in heaven) and 16 oz cool whip. In a graham cracker pie crust layer cream mixture, drizzle w/ caramel sauce (store bought jar), sprinkle w/ coconut, then another layer of each. Freeze. Everyone loves this too, even though I had a hard time getting it out of the pan, not sure why that happened. You have to try it!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Crouton Crusted Chicken&lt;/div&gt;&lt;div&gt;1 c. crushed croutons (any flavor)&lt;span class="Apple-tab-span" style="white-space:pre"&gt;  &lt;/span&gt;4 chicken breasts (i used 5)&lt;/div&gt;&lt;div&gt;1/4 c. shredded mozzarella  cheese &lt;span class="Apple-tab-span" style="white-space:pre"&gt;  &lt;/span&gt;1/4 c. milk&lt;/div&gt;&lt;div&gt;1/4 c. shredded parmesan cheese&lt;span class="Apple-tab-span" style="white-space:pre"&gt;  &lt;/span&gt;1/4 c. melted butter (i used a little less)&lt;/div&gt;&lt;div&gt;1 tsp. salt&lt;span class="Apple-tab-span" style="white-space:pre"&gt;       &lt;/span&gt;1 tsp garlic powder&lt;/div&gt;&lt;div&gt;1/2 tsp pepper&lt;span class="Apple-tab-span" style="white-space:pre"&gt;      &lt;/span&gt;2 TB lemon juice&lt;/div&gt;&lt;div&gt;Preheat oven to 350.&lt;/div&gt;&lt;div&gt;Combine croutons, cheeses, salt and pepper in a shallow bowl. Dip chicken in milk then dredge in crushed crouton mixture. Place in a greased 9x13 dish. Combine melted butter, garlic powder and juice. Drizzle over chicken. Cook for 35 min. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;My mom said this was one of her favorite meals ever! Very relaxing and satisfying.&lt;br /&gt;We also had a bonfire today as well as all the kids being pulled on the sleds behind the truck all around the neighborhood. I've been trying to catch up on my newthru30 reading as well as baking some bread. :)&lt;br /&gt;Here are two recipes from recently that I wanted to share:&lt;br /&gt;Cornbread&lt;br /&gt;1 c. flour                     3 1/2 tsp baking powder&lt;br /&gt;1 c. cornmeal             1 egg &lt;br /&gt;2/3 c. sugar               1 c. milk&lt;br /&gt;1 tsp salt                     1/3 c. oil&lt;br /&gt;Preheat oven to 400. Mix all ingredients. Bake 20-25 min in greased 9x9.&lt;br /&gt;I doubled this and made it in a 13x9 for 45 min.&lt;br /&gt;&lt;br /&gt;The Best Chocolate Chip Cookies Ever!!&lt;br /&gt;1 3/4 c. flour         3/4 c. brown sugar           1 egg yolk&lt;br /&gt;1/2 tsp soda          1 tsp salt                              1 c. choc chips&lt;br /&gt;14 TB butter         2 tsp vanilla                        1/2 c. toasted chopped nuts (optional)&lt;br /&gt;1/2 c. sugar          1 egg&lt;br /&gt;preheat oven to 375. Whisk flour and soda. heat 10 TB butter in skillet on medium heat for 2 min. swirl pan occasionally until golden brown 2-5 min. (Be careful not to let it burn, watch closely) Transfer to bowl, add 4 TB butter. Add sugars, salt and vanilla. Add egg and egg yolk. Whisk 30 seconds then let stand 3 min. Whisk 30 seconds then let stand 3 min. Repeat. (3 times total) Should be thick, smooth and shiny.  Add flour. Now, I'm not a huge fan of chili in general, but I love hers. I have to admit that it isn't real chili without cornbread. Sweet cornbread AND honey, to be exact. Mom suggested I use a mix, but I was determined to find a good recipe. So, I went online and searched and found a few that looked about right. With the help of my gramma, we chose one. And, can I just tell you that it was a hit? Everyone said it was the best cornbread they had ever eaten! I can't remember where I got the recipe from, but thank you to whoever came up with it! It will for sure be the one I keep in my file for later use. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Something incredible happened Tuesday night. And I'm not just talking about the fact that American Idol was on, because we all know that I LOVE Tuesdays just for that specific reason. &lt;/div&gt;&lt;div&gt;My friend Holly came over to watch it with us and I decided to make something sweet just for her. I had written down this recipe from a blog that I read occasionally and it was titled "The Best Chocolate Chip Cookie I've Ever Had." Now, that is a pretty big title and I wasn't so sure that it would live up to that. But ladies and gentlemen, we had a winner!! It was seriously the best cookie. AND the best thing about it was, they were NOT flat. Not a single one. I couldn't believe it. I think the secret (amazing) ingredient that made them so special was the browned butter. My new favorite technique in the kitchen. I have done this for Blueberry Muffins and they were to die for as well. Instead, it has been drizzling all day... but at least I get to be inside. :) &lt;div&gt;Yesterday, we spent pretty much the entire day baking cookies for the neighbors. As much as I love baking, I've realized that it's so much easier to bake by myself. Although it is nice to have some help every once in a while. We made Russian Tea Cakes, Frosted Sugar Cookie Cut outs, and M&amp;amp;M cookies. I also made Brigadieros, a chocolate caramel type candy. Really good. &lt;/div&gt;&lt;div&gt;Last week we had a Christmas party at work and I made cut outs w/ peppermint frosting and white chocolate fudge. Both were hits!&lt;/div&gt;&lt;div&gt;This week I have a potluck dinner and I'll be making peanut butter fudge and peppermint bark.&lt;/div&gt;&lt;div&gt;Next week my sister is graduating from nursing school and I have to make a few things for her party. &lt;/div&gt;&lt;div&gt;Then comes the week of Christmas. Out of all the things I've baked (cheesecakes, pies, cupcakes, etc) that is the one thing I have not mastered. Now, you may be thinking, what is so hard about making a simple cookie? Well.. obviously I know how to mix ingredients and put them on a baking sheet. But, the real problem is that when I open the oven to take them out, they are flat. Flat as a pancake, to be exact. It is so &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;disappointing&lt;/span&gt;! I mean, they still taste good, but flat is definitely not what I'm looking for. I do have another recipe that I like, but it is on the complete other side of the spectrum: it produces a cake like chocolate chip cookie, which is not necessarily the best option. AMAZING. what a night. &lt;div&gt;Also went to the beach w/ my fam. Ate some delicious seafood which included the best hush puppies I've ever eaten as well as Deviled Crab served inside the shell. Yum. Oh and can't leave out the doughnuts made right in front of you. Wow. What do you think?&lt;/div&gt;&lt;div&gt;My bedroom also has a new look, I got a new bed and a quilt! Which is so pretty. For some reason I have always wanted a quilt. And now I have one! Yay!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;My aunt and cousin are in town this week for my gramma's 80th bday celebration, so we are having alot of family time. For this occasion I am making a new york style cheesecake, which is not the most fun to make considering that it takes an hour to cook then has to sit in the oven (heat turned off) for 2 hrs and then has to sit at room temp for an hour before it  chills overnight. Basically that means I'm couped up in the house all day waiting for it to be done. But it's worth it because I love cheesecake and my gramma does too.. :) &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;We are making her a scrapbook for her bday. It is such a great idea and has turned out to be fun! Haven't seen her in about a year. Only got to spend thirty minutes w/ her, but it was the best half hour I've spent in a long time. She's just one of those people, those friends, a blessing really that I know will always be in my life. I'm just really thankful for her friendship and the fact that she is going out in the world doing God's work, serving others, promoting the Kingdom. It takes a special person to do that, and she is one of a kind. I miss her already.&lt;br /&gt;I also went to a wedding. My cousin got married and it was a beautiful service and awesome reception. They are such a fun couple and I'm so happy for them. We used sparklers to bid them farewell. It was such a lovely sight.&lt;br /&gt;I'm exhausted physically and emotionally tonight. It became a routine, nothing special. &lt;/div&gt;&lt;div&gt;But for the first time, I really connected with the reason we take communion.&lt;/div&gt;&lt;div&gt; It actually meant something to me today. &lt;/div&gt;&lt;div&gt;And that was huge. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;PS: I saw Terminator Salvation and loved it.&lt;/div&gt;&lt;div&gt;Oh and one more week of preschool left, my kids will be graduating on Friday, can't wait to see them in their cap and gowns, so cute :)&lt;/div&gt;&lt;div&gt;And.. it's my mom's bday tomorrow so I made Raspberry Almond Cupcakes w/ Chocolate Ganache. Thinking about it reminded me of many awesome birthdays I've been so lucky to have.&lt;br /&gt;My two most memorable ones have been my senior year of highschool and my senior year of college. Both were surprise parties. They were great. I remember feeling so special.&lt;br /&gt;So I'm looking forward to turning 24. And eating chocolate cake. With my parents.&lt;br /&gt;&lt;br /&gt;Now, that statement alone may not seem that exciting to you.&lt;br /&gt;&lt;br /&gt;But, I actually had a great time.&lt;br /&gt;&lt;br /&gt;The weather was beautiful,&lt;br /&gt;the animals were fascinating,&lt;br /&gt;and, although it didn't quite compare to the Dallas zoo (further proving the fact that everything in Texas is bigger/better),&lt;br /&gt;it was a good day.&lt;br /&gt;&lt;br /&gt;And at the end of the day I got a Cherry Cream Slush from Sonic. With a little help from mom. It was the best meal I've had in a while. We made Almond Chicken Casserole and Fancy Green Beans. Both from Paula Dean. Love her. And of course we had a fantastic dessert thanks to my good friend Holly: Coconut Cranberry Bars. Delicious. Then we had a game night, which was so fun. I almost prefer home cooking. My mom's. But I do love a good &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;Italian&lt;/span&gt;&lt;/span&gt; place. Oh and this amazing &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;Peruvian&lt;/span&gt;&lt;/span&gt; place here in Charlotte.&lt;br /&gt;&lt;br /&gt;What are you scared of in the kitchen?&lt;br /&gt;Burning cookies. It always happens. Basically the point was that temptation never comes from God, only satan. So if you are struggling with temptation, know that it is not from God, so get it out of your life! I just loved the way pastor steven put it. My dad also loved it, which is why he continued to shout it out to everyone he saw in the parking lot and when we went to play volleyball. It gives him a reason to curse and get away with it. ha. I got these from other blog sites, so they aren't my own recipes but I have tweaked them a little.&lt;br /&gt;&lt;br /&gt;2 cups oats&lt;br /&gt;1 tsp cinnamon&lt;br /&gt;1/2 tsp salt&lt;br /&gt;3 TB plus 1 tsp veg oil&lt;br /&gt;1/4 cup honey&lt;br /&gt;1/4 cup brown sugar&lt;br /&gt;1 tsp vanilla&lt;br /&gt;1/3 cup raisins&lt;br /&gt;1/3 cup almonds&lt;br /&gt;1/3 cup craisins&lt;br /&gt;Preheat 325. Toss oats w/ cinnamon &amp;amp; salt. In medium bowl stir oil, honey, sugar &amp;amp; vanilla. Pour over oats. Mix well. Pour onto baking sheet. Bake 10 min remove &amp;amp; flip. Add almonds. Bake 5 min. Flip again. Bake 10 min. Cool completely. Add raisins and craisins.&lt;br /&gt;&lt;br /&gt;My favorite recipe: (contains chocolate)&lt;br /&gt;3 cups oats&lt;br /&gt;1/2 cup almonds&lt;br /&gt;1/2 cup coconut&lt;br /&gt;2 TB sugar&lt;br /&gt;pinch of salt&lt;br /&gt;6TB honey&lt;br /&gt;2 TB veg oil&lt;br /&gt;1/2 cup choc. chips :)&lt;br /&gt;Preheat 300. Combine oats, almonds, coconut, sugar &amp;amp; salt. Warm honey &amp;amp; oil in microwave (about 1 min). Pour over dry ingred. spread on baking sheet. Bake 20 min. stir halfway through. Cool completely. At least it is for me. I realized that I have been sick more often this year than ever in my life. I mean, I had pnuemonia for heaven's sake!! I've had the flu twice now. The first time not so bad. The second which happened two days ago, really bad. I won't go into any details, but I the only thing I've been able to keep down the past two days is half a bowl of chicken noodle soup. I don't remember ever feeling that awful. Ever. I'm just thankful I'm finally getting over it. I guess I don't have a very good immune system. Or maybe I should start taking vitamins? Yuck. Anyways, the point of this is to say that I would rather do ANYTHING than be sick. And, I haven't been able to bake much at all these past two weeks. :( But hopefully, by tomorrow I will feel up to being around food again. Especially when it includes coconut and chocolate chips. :) I've been making my own, homeade and sharing it with my neighbors. It's been a huge hit! I'm really not much of a breakfast person, but I love this particular recipe with vanilla yogurt. Yum!&lt;br /&gt;I had a reason this weekend to make my favorite chocolate cake. My gramma had been staying with us and she left today, so last night I made Fat Chocolate Cake. The best thing about this cake is the frosting. Now, usually I'm a bigger fan of the actual cake part than the frosting, but in this case, the frosting is out of this world. Really. I could have seriously eaten the whole bowl. I had to restrain myself. So we enjoyed that on Friday as well as Baked Fries (potato wedges). I got the recipe for those on one of my favorite food blogs. They were delicious! My small group had a party which was a blast! We played Mario Kart and Taboo and ate some good food! Lots of laughing :) &lt;/div&gt;&lt;div&gt;The service at Elevation today was so great. It really spoke to me and encouraged me. &lt;/div&gt;&lt;div&gt;I've been thinking alot lately, and talking w/ my parents about maybe opening a used bookstore/coffee shop in this area. This has always been a passion of mine and a dream. The other day I was looking online for bookstores and found out that there is only one in Charlotte (besides millions of Barnes and Nobles) so we are starting to actually talk about this as a possibility in the future, kinda exciting! Plus, the sermon was all about vision! So, I'm going to pray about it and see what happens! I would absolutely love to own a place like that. &lt;/div&gt;&lt;div&gt;After church today we went to my favorite place to eat here. A peruvian restaraunt. I put some pictures up to show you what we ate. It was delicious. I much prefer it to American food. We had Papas a la huanciana (potatoes/eggs in a yellow sauce), real corn nuts (so addicting), Lomo saltado (beef w/ french fries and rice), and fried Yuca, oh and Inca cola, (kinda tastes like big red, but is in fact, yellow.). Needless to say, I was kicked out of my room and slept horribly for three days, but it was worth it. We had so much fun! We went to downtown Waxhaw, which consists of one small main street and a few side streets of cute antique, artsy stores. I bought a children's book that I used to read as a kid and it kindof inspired me.. my dad has a collection called "the grandpa pile" which is basically a box of books that he has kept over the years of kid's book that my sisters and I enjoyed.  So, now I am going to start my own collection, seeing as I really do love children's books and hopefully someday I will have a few of my own kids to share them with. :) &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Over the weekend, I made two desserts. One has a really cheesy name, but is actually one of my favorite desserts. It's called... wait for it... Cherry Yum Yum. ;) It really is yummy though. But from now on I will refer to it as Cherry Cheese Dessert. Because it is essentially cream cheese, sugar and cool whip with a crust and cherry pie filling on top. Now, that may not seem too great to you, but don't knock it till you try it. &lt;/div&gt;&lt;div&gt;The other dessert I made with the help of my second cousin? is an apple cake. Now, if you may remember I recently made a pear cake. Yes, I'm a little obessesed with fruit desserts right now. But can I just tell you that it turned out perfectly. It had a carmel glaze on top which really made the cake. I don't have any pictures to show for it, mainly because they were  both eaten up before I could find my camera, but trust me, it was a good weekend :) &lt;/div&gt;&lt;div&gt;Oh yeah, and it was also my sister's birthday.. haha. It always makes me feel better. :) So a few days ago, I made a batch of no-bake cookies. Probably one of my favorite cookies just because they are so quick and easy to make. And they always hit the spot.  I have the absolute best recipe for them and I've made them so many times I actually have it memorized!&lt;br /&gt;&lt;br /&gt;I had tacos tonight at a friend's house and I have a new ingredient that I will forever add when I make them myself: chopped green olives. Who would have thought?&lt;br /&gt;&lt;br /&gt;This Saturday is Elevation's (my church) 3rd year anniversary! They are having a big worship service to celebrate and I can't wait! I am so thankful for this church and the opportunity to be involved there. Unfortunately it failed to taste of pears, but was very moist and delicious anyways. More along the lines of a spice cake. I did however find the perfect recipe, one I've been wanting for quite some time. One of my mom's friends (an amazing cook) lives in atlanta and we have visited her several times. Each time we go, she makes a great meal that always ends with a perfect dessert. One of those times she made a Caramel Glazed Pear Cake. It was one of the best things I've ever eaten. And I finally have the recipe! :) Yay!! I might have to wait a while before making it because I don't think my family can handle two Pear Cakes in a row.. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;On another note. I went to the Melting Pot last night with two girls from my small group. It was so much fun! I had only been there one other time, and it happened to be not that great of an experience... but this time was awesome! We ate sooo much though. The food was really good. The only thing that I would have changed is that our reservation wasn't until 10:15pm. Which, is way past my bed time.. so I didn't get to sleep till 2!!! It's a tad bit behind the times. I promise you I will work on that this weekend, when I have some free time.&lt;br /&gt;But in the meantime, I'll give you a little update.&lt;br /&gt;I haven't baked much in the past few weeks, sadly enough. I feel as though every moment I have is filled, and that I am constantly wanting to sleep and feel completely rested, which never happens. Basically my job is wearing me out, the kids are wearing me out. I love them, but dang, it requires beyond 100%!&lt;br /&gt;I did recently discover ITunes again. There is a new application that is amazing. And I admit, I'm addicted to buying new songs. Especially ones I've never heard of. It's so great learning about new bands and artists! I love my ipod :) And Coldplay.&lt;br /&gt;On a very good note. I am going to Arkansas for a long weekend in Feb. I seriously can't tell you how excited I am to see my dear best friends again. It's been too long since I've seen them face to face.&lt;br /&gt;I'm turning into an old person. Seriously. I go to bed at 9pm. I never want to go out, or anywhere for that matter on week nights. It's not that I'm antisocial, it's just that I like sleeping. And I am literally so exhausted by 6 every evening that to even consider going somewhere is just too much for me. I need to liven up a bit. This time of year I am always reminded of how blessed I am. I just have the greatest friends and family. Gosh! :)&lt;br /&gt;A good thing about my current job is that I get 2 whole weeks off work! I'm so thankful for that because the past few weeks have been pretty challenging and overwhelming. Not to mention that I've had pneumonia.. I think I'm finally getting over it though, hopefully. I'm planning on getting alot of reading done, so I need suggestions on books to read. I'm almost done with Inkdeath, the 3rd book of a series I've really enjoyed. So, I'm ready for something new!&lt;br /&gt;Let's see, I haven't done much baking lately, only because I haven't been feeling the best. But, I did make my famous fudge.. so good. It was a hit. Also we made tons of cut out sugar cookies and decorated them, they were awesome, but alot of work. I'm looking for an extra special recipe to make for xmas dinner.. any ideas? Maybe something with peppermint.. we'll see.&lt;br /&gt;Something I also like about Christmas is the opportunity to write letters. I really enjoy that.&lt;br /&gt;Oh and... the fact that I go to the most amazing church ever and that they are having a xmas eve service that will probably blow my mind is the thing I'm most excited about. :)&lt;br /&gt;Well, Merry Christmas to all. And I got hired as a baker! This has been a dream of mine for quite some time and it was a real miracle that I'm getting the opportunity to pursue it. I went into it thinking I was going to get a job as the cash register person or doing food prep, and then eventually maybe learn a little about the bakery side of it. But he decided to give me a chance and start training me right away as a baker! I couldn't believe it, still can't. I start on Monday! I'm a little intimidated, but I'm more excited about getting the chance to see if this is really something I want to pursue in the future. Plus I'll be getting to bake all the time, which I love! The only bad thing is I have to get there at 5 in the morning. And if you know me at all, you know that I am not a morning person. So it will take some getting used to, but I'm thankful that this worked out. I like it alot. I've met a few really cool people and I really enjoy the kids, well most of them.  :) Having a job really makes life alot better. I have a purpose now and I have the opportunity to impact the lives of others. It's really exciting for me. Plus, it's nice to have something to do rather than just sitting at home all day.  I'm so thankful for a job. I don't think I've ever been so thankful to be able to work. But being here and not being able to get a job for a few months, makes me realize that I shouldn't take it for granted. I have a new appreciation and I think that's why I'm so happy to go to work, at least for now I am.&lt;br /&gt;Today a little girl asked me if I remembered her. It was nice to know that she wanted me to remember her. I was so honored to be asked and I had an amazing time. I got to wear a great dress and spend time with people I love doing fun things. I can't even begin to describe how happy my heart felt when I saw my friends this weekend. It's like I was warmed up inside for the first time in a long while. Just being with these few people for a short period of time lifted my spirits so much. In fact, it was so hard to leave this time, because it felt like normal with them. It was comfortable, easy, wonderful. I didn't want to leave that. It's like something is missing. Living my life without these people just doesn't seem right. Yes, I do talk to them on the phone and on facebook and all that, but I miss experiencing things with them. I'm trying to start my own life out here and it almost seems worthless sometimes because I think I was so much happier in Arkansas. Don't get me wrong, Arkansas itself isn't the greatest state, but it felt more like home to me than anywhere else I've ever lived. And I miss that.&lt;br /&gt;Hopefully one day I'll be able to write about how much I love it here and all the awesome opportunities and experiences I've had.&lt;br /&gt;Don't get me wrong, I do have people here that I care about too. It's just different, but I am going to keep trying. I'm not going to give up on North Carolina just because it's hard and I cry alot.. I'm going to do my best to make the best out of living here, by making more of an effort with the people here. I want to put everything I have into making good relationships here. Because relationships are the most important thing to me and always will be.&lt;br /&gt;I'm reading 90 Minutes in Heaven right now. It's a great story. I love pictures. They can make you laugh, smile, and even cry. I have so many great memories, God has truly blessed me with wonderful people in my life. When I think back on the last few years of my life, I don't think about school or grades or really anything that troubled me. I just remember all the amazing friends that have made my life so much brighter.  Being away from those people has made me realize how important they are to me, vital really. I always loved them and was thankful for their friendships, but not having the priviledge to spend time w/ them whenever I want to has really opened my eyes. I think I took for granted the fact that I could just stop in and just sit and talk w/ Kim and Nick anytime. Or go to Erin's apartment and watch Scrubs. Or play guitar hero at the Cornett's house. Or go eat at Bangkok w/ all the people I love.  Without my friends, my life wouldn't be as rich. And even though I don't have the luxury of seeing their lovely faces, it still warms my heart to know that they are still there for me and always will be. So thank you to all my dear friends. Know that I love you so much and miss you terribly.&lt;br /&gt;Side note: I played sand volleyball in the rain today w/ a bunch of people today. It was AWESOME!&lt;br /&gt;I still haven't started working.&lt;br /&gt;I am going to see the new Indiana Jones movie opening night, first showing.&lt;br /&gt;I am going to Dallas in 10 days. It was one of those days where it didn't feel hot at all, it was well, perfect. There was a cool breeze and.. I was home alone. Which meant that I could sing along, really loud I might add, to my ipod. So I put it on shuffle and relaxed. I didn't realize how long it had been until my dad came home and I looked at my watch. It had been almost 3 hours... and what's worse is that I had been sitting in the same position... so basically here I am sitting in bed looking like a lobster on only the front half of my body. There is a pretty distinct line, and it would be quite funny if it didn't burn so bad. Sunburns are not fun. I'm only hoping it will eventually turn into something that resembles a tan.&lt;br /&gt;I went to a new staff connection meeting tonight for the Y. I felt like I was back in school. It was a 2 hour long powerpoint presentation... But I do get paid for being there. I'm getting more and more excited about starting some form of work and more excited about meeting people.&lt;br /&gt;There is a SpringFest in Waxhaw this weekend, that I'm super excited about. I love little festivals. They make me happy. She focuses all her time and energy on making other people happy and never any time on what makes her happy. I've been so caught up with other things the past few weeks, that I haven't taken time to think about what's going on with me. I've realized that I have issues. First of all, I hate money. I hate the fact that I never seem to have any. I want to be able to travel, go to concerts, do fun things! But I am having trouble finding a job that will fund all of that. I also have confidence issues. I wish I could be more confident. I've been praying alot lately that God will guide my steps and lead me to the right job. God gives us many options in life and He also gives us ability to choose for ourselves. When I make decisions I usually think well what if I missed out on something that could have been better? Well, I realized today that I can't live like that. I have to believe that whatever path I choose, God will use me as long as I am looking to Him for guidance. Maybe there isn't one specific thing in the world I am meant to do, maybe there are several things I could do.&lt;br /&gt;So I made a decision today. I am going to take the job at the Y and also hopefully at Starbucks (I have an interview there on Monday). Even though neither job pays alot and both are part time, at least I won't get burnt out! Plus I'm getting to do two things I enjoy, work with kids and at a coffee shop!&lt;br /&gt;side note: I went strawberry picking this weekend. It was awesome. I also played sand volleyball with a bunch of people which was equally amazing. I always want to fix other people's problems. It hurts me so much when I am not able to help those who are hurting. I know God has given me compassion for people in general, especially those close to me, but it can sometimes be very difficult. I hate the feeling of helplessness. I know God is ultimately in control, and most of the time I probably won't be able to fix anything, but I still tend to get overwhelmed with the need to DO something.  Today has been especially hard for me to try and live my life without thinking about other things. I've been trying to trust God and just pray. I believe that God does answer prayers. Prayer is a powerful thing. It's a great privilege to be able to talk to God at any moment, I love that. Sometimes, though I wish there were some way to make things happen NOW. I know God has a purpose and plan for everything, and His timing is perfect. It's just hard to see that through human eyes. Especially when my heart goes out to my friends who are struggling. So I'm drinking a glass of wine, hoping it will help to relax me. I start my new job on Tuesday! I am really ready to get into a routine, get to know people, make some money, spend time w/ kids, and... get texting again!! :) I would appreciate prayers though. I don't think I realized how anxious I really was until last night. I got into bed at around 11, and I was really sleepy, but for some reason I couldn't sleep. I think I woke up about a million times feeling pretty anxious. Deep down I think I'm terrified that I won't be able to do a good job. That I'm not qualified. That I won't have enough confidence. That it will be uncomfortable. The list goes on and on.. BUT!&lt;br /&gt;I went to church today. The church I'm going to is called Elevation. It is actually only the second time I've attended, but the first time I've heard the main pastor speak. And wow. It was amazing! I loved every minute of the service. I even laughed a few times! The pastor was a great speaker and gave a great message. The title was small is the new big. So basically what that means is that God can lift our burdens when we take small steps. The little make make the biggest difference! He said, "God doesn't initiate change with a big BANG, He sets it off with a small spark!" I loved that. I think I always expect God to do huge miracles, but I never want to do anything about it myself. So the pastor encouraged us to take baby steps this week. So that's what I'm going to do on Tuesday. I'm just going to show up and trust God that He will guide my steps, even if I am unsure and a little scared of what will happen. Ultimately, God has a purpose and can use me whereever I am. So I was pretty pumped up after church! I'm realizing how empty life can feel without close friendships. I think I have adjusted well to being here in general, but I have really felt like something is missing lately. Companionship. But fortunately, God always comes through in difficult times for me. My mom, dad and I had a really good conversation tonight. We talked about the importance of relationships between fathers and sons. The importance of saying "I love you" to those that you love. The importance of encouraging and affirming others. I realized how lucky I am to have my parents. They have always been there, such great examples of faithful people. I have always felt loved and good enough for them.&lt;br /&gt;We also talked about faith. I wonder if I had been saved in a more dramatic, drastic way, would my faith be stronger? Sometimes I wish I had a more exciting testimony. But I also know that God has been with me and has provided for me and has done miracles for me even if they aren't as amazing as others. I am reading a great book right now called The Shack. The main character has an encounter with God and reading it makes me really have a desire to have the same. How cool would it be to see God face to face?&lt;br /&gt;Overall, even though I may feel lonely and sad and really really miss my friends. No cars honking or loud engines driving by. No pesky neighbors or bright city lights. Just trees, peace, birds singing, cool breezes. I live in the middle of a small forest. Our backyard is amazing. I went outside this morning with my coffee and sat on the porch. It is refreshing to be somewhere so peaceful and so natural.&lt;br /&gt;My dad is obsessed with birds, hawks mainly. We have bird feeders everywhere and my parents get so excited every time a bird flies on our porch. My dad owns a pair of binoculars and he runs and gets them every time he thinks he sees a hawk. They are easily entertained. :)&lt;br /&gt;When I turn out the lights at night, it is completely and totally dark. You can't see anything. I'm used to my eyes adjusting and seeing some light through the windows, but there is nothing. It's crazy!&lt;br /&gt;We went on a walk today. One car drove past us the entire time. And we knew them of course :) Everyone knows everyone out here, it's really cool.  It was beautiful weather today. The colors of spring are beginning to come out in the trees. I need to invest in a camera, because I can't explain how lovely the trees are here. Everywhere you look, all you can see is nature. It's like you are camping all the time, except that you don't have to wear flip flops in the shower :)&lt;br /&gt;Good news! I sent my resume to the YMCA this morning, and about 30 minutes later I got a call saying they were impressed with what I sent them and wanted to set up an interview! What an answer to prayer. Hopefully it works out, I think I would like working there, at least it's somewhere to start.&lt;br /&gt;I've decided that wherever I end up living, I want it to be somewhere where my good friends are. My parents are so happy here because there are 3 other families all in the same neighborhood that they have known for years. They see each other pretty much everyday and it's so neat to see how close they are and how they have become like family. That's how I want it to be for me someday. My new home. That is weird.&lt;br /&gt;My dad and I woke up at 5AM yesterday morning and didn't arrive here until midnight. It was such a long day, I thought we'd never get here. The first half of the trip was good, I slept on and off for about 8 hours. Unfortunately it was raining pretty much the whole day, so that made it a little bit more difficult. I drove 2 out of 18 hours.. I don't know how my dad stayed awake the whole time. He is awesome. Of course there were a few hours in there that we argued about money. Of course he had to bring up the fact that I have to get a new liscense, get my car registered here, change my insurance, get a new cell phone plan, as well as giving me many options for jobs. It was really stressful, but I got over it and realized that it's all part of moving and it was my choice to move so I just have to deal with it. I'm just praying that I get a job soon because I'm broke, for real. Hopefully though, once I get my own phone plan I will get texting again! So that will be fun! Wow, it seems like I've been away much longer than that. This morning I woke up and realized that it was the first Sunday in forever that I didn't go to Cross Pointe. I didn't get my usual coffee with Irish creme creamer and lots of sugar. I didn't get to work in the nursery. I didn't get to sit next to Kim, Jeremy, Erin or Nick. I didn't get to hear Pastor Larry give a wonderful, inspiring sermon. I didn't get to hear/laugh about one of our "favorite" songs Say So. :) My day was just not complete and I definetely missed all of that alot. &lt;br /&gt;I did however have an interesting day... my cousins Jacob and Zach stayed the night with us so this morning it was my job to entertain them... so we decided to go eat at Jimmy's (for the 3rd time this week) and then the boys convinced me to go on a trail with them.. worst idea ever... going on a trail basically means walking around in the wilderness along paths that are overgrown with grass trying not to get lost... we did in fact get lost and ended up walking through the woods for about an hour sweating and complaining the whole way. quite an adventure. i can't tell you how happy we all were when we finally saw something that resembled civilization. :)&lt;br /&gt;It took me a few hours of laying on the couch reading and drinking tea to get my energy back and cool down.&lt;br /&gt;We ended the day with watching Bedknobs and Broomsticks and Oprah's Big Give. I've decided that my ideal job would be to be able to give people exactly what they need to improve their lives and make them really happy. That's all I really want to do, how hard can that be?&lt;br /&gt;I'm on my fourth book and I intend to finish it tonight, so I better get started. I've been kinda busy I guess, seeing friends, visiting family. But the days go by slow and I find myself having too much time to think about what I might be missing out on... I've been taking walks every day here. It gives me a chance to get out of the house and clear my head, and pray. I plan on continuing this ritual in NC. I'm getting my hair highlighted tomorrow and I'm getting to see two friends that I haven't seen since highschool, so that should be fun. Even though I admit that I'm not very good at small talk and that's usually what these get togethers are about. I miss being around those who really know me and accept me for who I am. I was questioned/practially condemned last night by those who disagree with the fact that I haven't made up my mind who I'm voting for yet. It was not fun.&lt;br /&gt;I've realized that I don't like being alone as much as I thought I did. It is nice for a while, but I really need people in my life. People that care and will listen and just hang out with me. So I'm praying that God will help me meet people that will fulfill that need.  Obviously they won't ever be able to replace the amazing people that I already have in my life, but you know, I'm gonna need something! :)&lt;br /&gt;I am finally going to get to sleep on something other than couch cushions tonight! It is a gorgeous day today. The sun is shining, the sky is blue and there is a cool breeze, it's absolutely perfect. I miss these days in Texas. And, I went tanning :) haha.. ok I know, it's bad for you, but the bridesmaid's dress I have to wear in a few weeks would look much better on someone without extremely pale skin. I went to lunch at a great Mexican place where they make the tortillas there right when you order them, and you can watch them! It was awesome and I ate three with butter and sugar. yum! Then Joy (my baby sister) and I went on a walk around the Wycliffe Center (where I'm staying at the moment).  I have to preface this with the fact that my sisters and I practically grew up here. Every summer we went swimming at the pool nearly every day as well as exploring the forest playing games and imagining what it would be like to live in the woods eating berries and sleeping under trees. We had so many good times and adventures. So Joy and I decided to take a walk and document it by taking pictures at all our favorite places. Of course it looks a little different now, especially the playground that we spent so many hours on. But it was really fun.  My plan for the last part of the day is to get some reading done, I went to the library today and got some books by Nicholas Sparks (my new favorite author), watch American Idol and maybe a movie with my gramma. And of course drinks a few cups of tea in between all that. Tomorrow I'm going to stay with my aunt in Justin, Tx. Very small town, even smaller than Duncanville! Most likely I will be baking something extraordinary with her, so I'm pretty excited about that. I never thought I'd say this, but it definetely feels more like home than Texas (duncanville) does.  As soon as I entered Dallas yesterday evening, it started pouring rain... and that marvelous weather has continued all day today, figures... Along with the bad weather, I also have been sneezing non stop, it appears I am allergic to the entire state, now I know why I decided never to live here long term. I have also been crying on and off for the past day and a half. I guess when I made the decision to move, I had a picture in my head of how exciting and wonderful it would be to live somewhere new. But I don't think I realized that my I left alot of my heart in Arkansas. I know that sounds cheesy, but it's true. My amazing group of friends there are my second family and I actually feel kind of lost without them.  We have gone through so much together and it's been almost 5 years, and the most life changing years for me. They know me better than anyone, maybe even my actual family. Example: as many of you may know, I use the word awkward fairly often, because awkward things tend to happen to me quite often. I went to lunch today with my grandmother, her sister and my cousin. I used the word several times (because it's normal for me) and each time they commented on how it wasn't awkard or how was it awkward and I didn't really have an explanation. Probably because I've never had to explain myself, my friends just know... :) anyways, I'm sorry this may seem like a post written by debbie downer, but I'm having a pretty hard time right now.&lt;br /&gt;On a funny note: I am sleeping at my grandmother's house, well it is in fact a trailer. And instead of a bed, I get the privilege of sleeping on the couch cushions on the floor. It actually wasn't that bad, I think all those years of camping in horrible conditions have prepared me for the next few weeks.. :) I also learned that there is a skunk living underneath the trailer, which means that my stuff will start smelling of that wonderful odor they put off. Good thing I don't have anyone to impress here.&lt;br /&gt;How do you ever really know if what you are doing is the right thing? I have been so sure of this decision and now I am doubting myself. I am trying to trust the Lord that this is what He wants for me, but at the same time I am really scared of losing what is so important to me.&lt;br /&gt;Well I guess that is all for now.
